Breakfast is considered the most important meal of the day because it kick-starts your metabolism, gives you energy, and helps maintain your concentration. My recipe for banana oatmeal pancakes are perfect for giving that push we all need at the beginning of each day. It contains healthy alternatives to the gluten, sugar, and dairy products that are found in most flapjacks. Due to the wholesome ingredients, you won’t feel guilty about eating a stack of these right when you wake up!


Ingredients

  • 1 cup of organic rolled oats (blended into flour)
  • 1 mashed banana
  • 1 egg
  • 1/2 cup unsweetened almond milk (or coconut milk)
  • 1/4 teaspoon of baking soda
  • 1 tablespoon coconut oil
  • 1/2 tablespoon ground flax seed
  • Pinch of cinnamon
  • Dash of pure vanilla extract

OPTIONAL:

  • 1/2 tablespoon of Navitas Cacao Powder (a mayan superfood, great source of antioxidants, vegan, non-GMO, gluten-free)

Instructions

  • Combine the above ingredients in a mixing bowl and whisk until perfectly blended. (Another option is to combine everything into a blender, I typically put the oats in first and then add the remaining items.)
  • Heat a medium-sized pan on low
  • Coat pan using coconut oil spray
  • Using a ladle, pour batter into 4-inch size circles onto pan
  • Cook 1-2 minutes each side

Berry Compote

Ingredients

  • 1 cup of blueberries, blackberries, strawberries, or raspberries (you can also choose to mix them all together!)
  • 1/2 tablespoon coconut oil
  • 1 tablespoon of honey
  • Sprinkle of ground ginger
  • Sprinkle of cinnamon or 1 cinnamon stick

Instructions

  • Heat a small-sized sauce pan on low
  • Cook the berries and added ingredients on low for 20 minutes
  • Stir occasionally
