These gluten-free, no-bake granola bars are so simple to make yet so delicious! They contain that made-in-heaven combination of salty and sweet. Easily customizable, you can mix in as many add-ons as you want and create the flavor profile of your choice. My favorite part about them is that they are high in fiber which is something you should always look for in your everyday snacks.


*this recipe will make up to 10 bars*

Ingredients:

  • 1 1/2 cups of gluten-free rolled oats (very lightly toasted)
  • 1 cup of tightly packed dates (pitted)
  • 1/4 cup honey or agave nectar 
  • 1/4 cup creamy natural peanut butter or almond butter
  • 1 cup roasted unsalted almonds (loosely chopped)
  • Suggested Add-Ons: toasted walnuts, dark chocolate chips, dried fruit, coconut shavings, banana chips, sunflower or pumpkin seeds

Instructions:

  1. Process dates in a food processor until small pieces remain
  2. Toast the oats and almonds in a 350-degree oven for 10-15 minutes or until slightly golden brown
  3. Place the oats, almonds, and dates in a large mixing bowl
  4. Warm honey and peanut (or almond) butter in a small saucepan over low heat
  5. Pour the heated mixture over the ingredients in the bowl and stir until thoroughly combined
  6. Spread the mixture onto a small backing pan. Press down firmly using something flat until even
  7. Cover with parchment paper and let firm up in the fridge for 15-20 minutes
  8. Remove the concoction from the pan and chop into 10 even bars

*store in an airtight container for up to a few days: they can be kept in the freezer for extra crunchiness*
