Are you looking for something to serve at your summer parties? My homemade cherry mojito is perfect any daytime gatherings.
The key to this adult beverage is the use of seasonal cherries. It makes this drink just the right amount of sweet while the club soda perfectly balances it out with a little fizz. All you need are a few simple, fresh ingredients and you will have a new favorite summer cocktail before you know it!
- 1 cup of water
- 1 cup of honey
- 1 cup of cherries (pitted)
- 1/2 of a lime, sliced in wedges
- 1/2 cup fresh mint leaves (for my guide to growing your own garden herbs, Click Here!)
- 2 ounces white rum
- 1 ounce chilled Fever Tree club soda
- Ice cubes
- Garnish with mint leaves and cherries
cherry- honey puree: (do this a couple of hours ahead of time so that it has time to chill). Boil 1 cup of water, then add 1 cup of honey and stir until dissolved. Let cool, then chill in the refrigerator until it gets very cold. Then, blend the chilled honey syrup with 1 cup of pitted cherries. Pour through a strainer, discard the cherry pulp ,and keep the sweetened cherry juice.
TO MAKE: In the bottom of a heavy drinking glass: combine the mint and lime wedges, using a muddler to smash them and release some of the mint. Add ice cubes, the cherry-honey puree, rum, and club soda. Stir to combine. Garnish with fresh mint leaves and cherries.
